Why I Created Busy Gluten Free

If you’ve ever felt nervous ordering at a restaurant because you weren’t sure if the food was truly gluten-free, you’re not alone.
For many people with a gluten intolerance, the fear isn’t just choosing what to eat—it’s worrying about how you’ll feel afterward.
I know this feeling well, because I’ve experienced it myself.
Something Was Very Wrong
I was in my early 30s, married, had a new house, and two babies under 5—so needless to say, I had a lot on my mind.
But something didn’t feel right.
I was dealing with daily anxiety, dizziness, headaches, stomach issues (spending way too much time in the bathroom), rash/hives, and constant brain fog. I couldn’t figure out what was going on—and honestly, I didn’t have the time to.
At first, I thought it was just everything going on in my life… but something told me this was different.
My Breaking Point
I spent over a year trying to figure out what was wrong with me.
I went to a gastroenterologist, an allergist, and even my primary care physician. I had blood tests run, an allergy test, and even tried different diets, but no one could pinpoint why these symptoms weren’t going away.
Each doctor dismissed my symptoms as a whole as well and said that it was probably due to the stress of having small children and hormonal dysregulation.
I remember vividly, though, that I was in a hurry one day to go to a playdate with a neighbor who had little children too, and I needed to grab something to eat before we went, which was quick. I put a couple of pieces of wheat toast in the toaster, spread some butter on them, and off we went.
Within 30 minutes of me eating that toast, I had the worst headache and brain fog I’d ever had. My stomach was hurting, and it was like an out-of-body experience, almost, where I almost felt I didn’t know where I was.
I started thinking about my children and decided right then and there that no matter what the doctors said, it was definitely food-related that was causing my symptoms, and I knew what I had just eaten was the reason.
Why Busy Gluten Free Exists
I remember that feeling of frustration, and just pure exhaustion of not knowing what was wrong, getting no support, and seeing no clear path forward when trying to eliminate gluten from my diet.
At that time, no one even talked about gluten intolerance or celiac disease, so mainstream grocery stores and restaurants had never heard of it.
I had to do my own research to find out what gluten was in and make a list (literally) of what I could and couldn’t eat.
It was tiresome, and not having any support from anyone (not even doctors) was upsetting and made me feel all alone.
Busy Gluten Free exists so that you don’t have to feel overwhelmed trying to figure this out on your own.
So you can feel more confident in your food choices.
So you can feel safer eating out—without the constant worry.

Anyone can Google “gluten-free restaurants in NYC” and get a list. Anyone can search for an app that lists supposed ‘gluten-free restaurants.’
But can you trust it?
Has anyone actually talked to these restaurants to understand how they prepare their food? Do they truly understand gluten intolerance?
These are the questions I ask.
I focus on safety and clarity so you don’t have to second-guess your decisions.
Know This Going Forward
