Is Sweet Potato And Eggs A Healthy Breakfast?

I don’t know about you but breakfast is the best meal of the day! And a quick and easy recipe for sweet potato and eggs to me is a great way to start the day off right.

I am constantly on the look out for breakfast, lunch or dinner recipes that involve simple ingredients, don’t take much time to make and contain a lot of nutritional value. Sweet potatoes and eggs are quality ingredients with a ton of nutrition.

According to Healthline1, sweet potatoes:

Sweet potatoes are very easy to make too and versatile as well. You can bake them in the oven, fry them in a pan, or even use a microwave or air fryer to cook them. With so much nutrition and being really simple to make, I believe they are a great hearty choice for breakfast.

Below are examples of the many different ways you can make sweet potato and egg dishes. Hope you give one a try!

Sweet Potato And Kale Hash With An Omelet Base

This is the version I made and yum, I plan on making it again! I’m definitely a potato person any way I can have them! Plus with kale being such a nutritious ingredient and being able to basically just throw it into any recipe, it makes it so easy to use.

I started with a plain egg as an omelet base (just scramble and cook as one piece, flip over and cook on both sides) and then put the sweet potatoes and kale hash over top of it. For extra flavor, you could add garlic or onions to the omelet or even Mrs. Dash which is a great way to get a variety of herbs all at once. You can find Mrs. Dash in many varieties in your local grocery store, but you can also find it on Amazon by clicking here (paid link). My favorite is the garlic and herb! One note though, Mrs. Dash is salt-free and most recipes call for salt so you may have to add some if using Mrs. Dash.

How To Make Sweet Potato And Eggs With Kale

So many different recipes to choose from for sweet potato hash with kale, but I got mine from a nutritionist named Abra Pappa, click here to learn more about her. I’m part of her ‘Stir It Up Society’ which is a subscription-based group where she shows you how to make cooking easier, prepping food, etc. while adding nutrition back into the mix. It’s so easy to eat processed foods nowadays and I’m trying to get back to eating better foods but I also need time-saving advice and she is great at it!

Although I can’t give out the exact recipe I made (this is Abra Pappa’s recipe and it is not posted on her website for the public) I did find a video which was a good example of how I cooked the kale and sweet potato hash with an egg. Two exceptions though, again I made an omelet as a base for this dish and I also fried up some bacon so I could then cook the sweet potatoes and kale in it to give it more flavor! You could even add the cooked bacon to this recipe to make a sweet potato and bacon hash!

Sweet Potato And Eggs Variations – With Added Protein!

I am amazed at how many different breakfast recipes with eggs and sweet potatoes there are! You pretty much can find it any way you like or even make a variation up yourself lol!

  • Bacon and sweet potato hash – buy a package of real bacon pieces if you don’t have time to make bacon.
  • Egg and sweet potato bake
  • Sweet potato and eggs hash – scramble the eggs in bits!
  • Ham and sweet potato hash – buy a package of diced ham chunks!
  • Sweet potato hash with eggs and spinach

As you can see, so many ways to make sweet potato and eggs for breakfast or dinner even! You could even make sweet potato and eggs for dogs, just cut out the spices, herbs and keep it simple with just sweet potato, eggs, ham, bacon, kale, etc.

Sweet Potato Casserole With Marshmallows

Finally, with Thanksgiving coming up, I can’t go without mentioning one of my favorite sweet potato recipes, sweet potato casserole with marshmallows, yummy!

So easy to make, like four ingredients and the recipe is right on the side of a can of Bruce’s Yams! Best of all, gluten-free!

I make this recipe every year and everyone loves it and doesn’t even know it is gluten-free! One word of advice, double the batch when making it and find the right casserole dish where everything is not spread out, it works best bunched up so the marshmallows can melt evenly on top.
