Gluten-Free Keto Cupcakes

Quick and easy gluten-free keto cupcakes! Found a package of Birch Benders cupcake & cake mix and frosting on clearance at Kroger the other day. Four simple ingredients, stir and bake, super easy! I only wish I had some raspberries, blackberries, or strawberries to add on top! They were very good, moist, light, and hit the mark because I was looking for a quick sweet treat, yum!

My husband has been eating a keto diet for years, but I rarely do this diet with him. I will say though that a lot of items on the keto diet crossover to a gluten-free diet. A keto diet is high in protein, and low in carbs, so a lot of meats, vegetables, and fruit are items that we both can eat which is helpful when it comes to making dinner.

Only took about 5 minutes to prep, and about 20-25 to cook, so easy you could make it for any occasion, or no specific reason whatsoever! This bag made about 12 cupcakes which to me, is just about right, not too much so I don’t eat them all myself!
